  1. Prepare the Onions:

· If using small boiling onions: Bring a pot of water to a boil. Add the whole, unpeeled onions and boil for 3-4 minutes. Drain and let them cool until you can handle them. The skins will slip right off. Leave them whole.
· If using large onions: Peel them and slice them into ½-inch thick rounds or wedges. They will break down more but are equally delicious.
