Hearty Slow Cooker Chicken Pot Pie Soup
This comforting soup captures all the classic flavors of chicken pot pie in an easy, slow-cooked soup form. It’s creamy, hearty, and perfect for a cozy meal.
Ingredients
For the Soup:
· 1.5 lbs boneless, skinless chicken breasts or thighs
· 3 medium carrots, peeled and diced
· 3 celery stalks, diced
· 1 medium onion, diced
· 2 cloves garlic, minced
· 1 cup frozen peas
· 1 cup frozen corn
· 4 cups chicken broth
· 1 teaspoon dried thyme
· 1/2 teaspoon dried rosemary
· 1 bay leaf
· Salt and black pepper to taste
For the Cream Sauce (added at end):
· 1/4 cup unsalted butter
· 1/4 cup all-purpose flour
· 1 cup heavy cream or half-and-half
· 1/4 cup fresh parsley, chopped
For Serving (Optional):
· Biscuits, puff pastry, or pie crust
· Additional fresh parsley
Instructions
- Combine Soup Ingredients: Place chicken, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, and broth in the slow cooker. Season with salt and pepper.
- Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is cooked through and vegetables are tender.
- Shred Chicken: Remove chicken from slow cooker, shred with two forks, and return to the pot. Discard the bay leaf.
- Make Cream Sauce: About 30 minutes before serving, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in cream until smooth. Slowly whisk this mixture into the slow cooker.
- Add Final Ingredients: Stir in frozen peas and corn. Cover and cook on HIGH for another 20-30 minutes until heated through.
- Serve: Stir in fresh parsley. Ladle into bowls and serve with biscuits or crusty bread.
Tips for Success
· Thicker Soup: For a thicker consistency, mix 2 tablespoons of cornstarch with 1/4 cup cold water and stir into the soup during the last 30 minutes of cooking.
· Make Ahead: Prepare everything except the cream sauce up to a day ahead. Add the cream sauce when reheating.
· Freezing: Freeze without the cream sauce for best results. Add the cream when reheating.
