CHOCOLATE PECAN TURTLE CLUSTERS

Of course! Chocolate Pecan Turtle Clusters are the ultimate easy, impressive, and delicious homemade candy. They have that perfect combination of salty, crunchy, sweet, and chewy that makes them irresistible.

This recipe is incredibly simple and requires no candy thermometer.

Chocolate Pecan Turtle Clusters

Makes about 24 clusters

Ingredients

· 24 pecan halves (about ¾ cup), plus more for topping if desired
· 24 soft caramel candies (like Werther’s Soft Caramels or Kraft Caramels), unwrapped
· 1 tablespoon heavy cream or milk
· 1 cup (about 175g) semi-sweet chocolate chips
· Optional: 1 teaspoon coconut oil or shortening (for a smoother, shinier chocolate)
· Flaky sea salt (like Maldon), for garnish

Instructions

Step 1: Prepare the Base

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the pecan halves in small clusters on the sheet. A classic “turtle” shape is made with 4 halves forming a star or cross, but you can also do simple pairs or even single layers.

Step 2: Melt the Caramel

  1. In a medium, microwave-safe bowl, combine the unwrapped caramels and heavy cream.
  2. Microwave on high in 20-second intervals, stirring well after each interval, until the caramel is completely smooth and melted. This usually takes about 60-90 seconds total.
  3. Stovetop Alternative: You can also melt the caramels and cream together in a small saucepan over low heat, stirring constantly.

Step 3: Assemble the Clusters

  1. Immediately spoon a small amount (about ½ to 1 teaspoon) of the melted caramel over the center of each pecan cluster. Use the back of the spoon to gently spread the caramel so it “glues” the pecans together and creates a base for the chocolate.
  2. Let the caramel set until it is firm to the touch. You can speed this up by placing the baking sheet in the refrigerator for about 10-15 minutes.

Step 4: Melt the Chocolate & Finish

  1. In a clean, microwave-safe bowl, combine the chocolate chips (and the coconut oil/shortening, if using). The oil helps thin the chocolate slightly, making it easier to dip and giving it a beautiful shine.
  2. Microwave on high in 20-second intervals, stirring thoroughly after each, until the chocolate is completely smooth and melted.
  3. Spoon a generous dollop of melted chocolate over the center of each caramel-covered cluster.
  4. Use the back of the spoon to gently spread the chocolate to the edges of the caramel.
  5. While the chocolate is still wet, you can press an additional pecan half on top for a classic “turtle” look, and then immediately sprinkle with a tiny pinch of flaky sea salt.

Step 5: Set and Serve

  1. Allow the clusters to set at room temperature until the chocolate is firm. This can take a couple of hours, or you can refrigerate them for 15-20 minutes to speed up the process.
  2. Once set, peel them off the parchment paper and enjoy!

Tips for Perfect Turtle Clusters

· Quality Matters: Using a good quality caramel and chocolate you love to eat will make a huge difference in the final flavor.
· Don’t Burn the Chocolate: Be patient when melting both the caramel and the chocolate. Stirring well and using short bursts in the microwave is the key to avoiding seizing or burning.
· Pecan Prep: For extra flavor, you can toast the pecans first! Spread them on a baking sheet and toast in a 350°F (175°C) oven for 5-8 minutes, until fragrant. Let them cool completely before using.
· Variations:
· Milk or Dark Chocolate: Feel free to use your favorite type of chocolate chips.
· Different Nuts: Try these with whole cashews or macadamia nuts for a different twist.
· Storage: Store finished turtles in an airtight container at cool room temperature for up to 2 weeks. They can be layered between sheets of parchment paper to prevent sticking. For longer storage, refrigerate for up to a month.

These are the perfect homemade treat for gift-giving, holiday platters, or just a special treat for yourself. Enjoy
