Ingredients

For the Bake:

· 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
· 1 lb smoked sausage or kielbasa, sliced into rounds
· 1 large onion, chopped
· 2 tablespoons olive oil
· 1 teaspoon garlic powder
· 1 teaspoon paprika
· 1/2 teaspoon dried thyme
· Salt and black pepper to taste
· 1 cup shredded cheddar cheese (optional)

For the Sour Cream Sauce:

· 1 cup sour cream
· 1/2 cup chicken broth
· 2 tablespoons Dijon mustard
· 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
· Salt and pepper to taste

Instructions

  1. Prep and Season: Preheat oven to 400°F (200°C). In a large bowl, toss potato cubes, sausage slices, and onion with olive oil, garlic powder, paprika, thyme, salt, and pepper.
  2. Bake: Spread mixture evenly in a 9×13-inch baking dish. Bake for 45-50 minutes, stirring halfway through, until potatoes are tender and golden.
  3. Make Sauce: While bake cooks, whisk together sour cream, chicken broth, Dijon mustard, dill, salt, and pepper in a small bowl.
  4. Finish: Remove bake from oven. If using cheese, sprinkle over top and return to oven for 3-5 minutes until melted.
  5. Serve: Drizzle with sour cream sauce or serve sauce on the side. Garnish with fresh dill if desired.
